The CAPS silicone molds were born from the idea of a self-sufficient visual entremets, without artifice and without coloring. It is composed of 2 parts, the top part is designed to bring color by using a fruit jelly or a dried fruit cream usually inside the entremets. The bottom part is designed to receive the different layers of cookie, mousse, crisp… No finishing necessary except a neutral topping to sublimate the shape and colors…
