110g eggs
40g egg yolks
150g sugar
125g almond powder
40g flour
60g cocoa powder
90g hot melted butter
50g egg whites
50g sugar

INGREDIENTS FOR THE CHOCOLATE GANACHE: 
80g single cream
80g milk
80g glucose
180g dark chocolate
